SWEET POTATO NACHOS WITH AVOCADO SALAD


Try this healthy and light alternative to a favourite snack! Enjoy x

2 large sweet potatoes, peeled and sliced thinly with a mandolin

olive oil spray

sea salt flakes

Avocado Salad:

1 large avocado, peeled and diced

8 cherry tomatoes, quartered

½ small red onion, diced

1 chilli thinly sliced

¼ cup coriander leaves

1 tsp olive oil

2 tsp lime juice

pepper

  1. Preheat oven 200C fan forced. Place sliced sweet potato onto trays lined with baking paper and spray each side with olive oil and season one side with sea salt flakes. Place in oven for 15 minute, turn over and bake for a further 5-10 minutes. Watch carefully so they do not burn. Allow to cool.

  2. Place all avocado salad ingredients together and combine.

  3. Serve sweet potato nachos in a bowl and avocado salad on the side.
