15 MINUTE - GLUTEN FREE MINI DONUTS


This is my first donut recipe using gluten free self-raising flour. I have made yummy fudgy mini donuts before but this time I was after a fluffy sponge-like donut that I could coat with a light glaze or a simple sprinkling of icing sugar and enjoy it with a cup of tea. Yes, something light, just like my daughter and I used to have prior to our Gluten Free journey. (I’m sure most people that eat gluten free also miss eating donuts).

Well it worked out pretty good! This recipe is not only easy and quick but the mini donuts actually came out super spongy! I know I sound surprised…. That is because I am! LOL. I really didn’t expect it to work out. In fact I never expect any of my desserts to work out because I believe I am hopeless at making sweets. I look at some of the amazing blogs that focus on sweets and I am in awe at how perfect their desserts turn out. Then again I am told that most people are either savoury cooks or sweet cooks. My aim is to eventually be both.

Now I’m sure there are much tastier recipes out there but these are quick and easy and I love a recipe that I can whip up fast. Best of all, these donuts are not too sweet. In fact the recipe has no sugar as instead I have added maple syrup. If you have a sweet tooth, I would suggest adding one heaped tablespoons of caster sugar or a very fine grain coconut sugar to the mix OR you can make a thin glaze by combining icing sugar, cacao powder and water and then dipping the donuts in it. If you are like me and don’t have a very sweet tooth then a simple icing sugar sprinkling would do fine. Enjoy x

Prep: 3 minutes

Cooking: 12 minutes

Makes 24 – 30 mini donuts

140g gluten free self raising flour (I used Orgran)

2 tbs melted butter OR (vegan butter Nuttelex)

1 egg OR (1 tsp Orgran egg replacer + 2tbs water)

½ cup milk OR dairy free milk

4 tbs maple syrup

1 ½ tbs organic cacao

½ tsp ground cinnamon

1 tsp white vinegar

Optional: 1 tbs caster sugar or fine grain coconut sugar

  1. Preheat oven 180C fan forced and prepare non-stick mini donut trays.

  2. Add all ingredients to a deep bowl and combine using a spoon making sure flour is not stuck to bottom of bowl, then using a hand held mixer, whisk for 30 seconds or until smooth.

  3. Add to a piping bag and pipe into each donut hole . Fill each hole no more than 2/3 way up. Bake for 12 minutes.

  4. Serve warm or at room temperature either dipping into a light glaze or with a sprinkling of icing sugar.

Optional glaze: Combine icing sugar, cacao powder and a small amount of water and mix until reaches a thick liquid consistency. Dip one side of donuts and allow to dry on wire rack.
