3 MINUTE SKILLET BREAKFAST


When my husband and I started our business, we never ate breakfast. It was just too hard to get up in the morning and prepare breakfast for ourselves and prepare lunch to take with us and think about dinner. Yes, I had to think about dinner because we would get home after work at 8pm. Last year, whilst on the whole30, we were forced to think about quick and easy breakfasts and this is how we came up with our 3 minutes Skillet Breakfast. I decided to post this because of the overwhelming responses on Instagram so here it is. Quick, really delicious and probably the breakfast you’ll have when you’re in a rush. Yes, pouring a bowl of cereal is quicker but definitely not as nutritious. Enjoy x

Serves 2

4 organic eggs

50g baby spinach

1 roma / egg tomato, sliced

1 tbs olive oil

sea salt / pepper

Optional: thinly sliced red onion

  1. Place olive oil in frying pan / skillet.

  2. Spread tomatoes all around and then add all the spinach.

  3. Make 4 ‘nests’ with the spinach and crack the eggs in each ’nest’.

  4. Place lid onto skillet and place over high heat for 1 minute. Then reduce heat and simmer for 2 minutes.

  5. Season with sea salt and pepper and serve immediately. Enjoy.
