Quick Beef and Vegetable Stir Fry
Quick and Easy, I make this on my busiest weeknights. You can serve it as it is or with rice, noodles and for a whole 30 meal, serve it with cauliflower rice. Enjoy x
700-800g thinly sliced grass fed beef
1 tbs tapioca flour
1 large brown onion, sliced
1 large red capsicum, sliced into strips
1 small carrot, thinly sliced on the diagonal
1 bunch bok choy, chopped into chunky pieces
1 large zucchini, sliced into strips
1-2 spring onion, cut on the diagonal
2 tbs olive oil
2 tbs coconut aminos (paleo friendly) OR 1 tbs soy sauce + 1 tbs oyster sauce
pepper and sea salt
Coat the beef with tapioca and set aside for 5 minutes.
Heat 1 tablespoon of the olive oil in a large wok or skillet over high heat. Cook and stir beef until browned, 3 to 4 minutes.
Remove beef to a plate and then add all the vegetables along with the other tablespoon of olive oil to the center of the wok. Cook and stir vegetables for 3 minutes.
Stir in the beef and season with sauce of choice. Continue to cook and stir for 1 minute. Turn off heat and garnish with sliced spring onions. Serve hot.
