BBQ Beef and Bacon Mexican Spice Burgers
The only reason I don’t make burgers more often is because I can’t stop at just one! I figured if I made each burger pattie big and thick then I would be satisfied. So that is exactly what I did. These BBQ Beef and Bacon Mexican Spice Burgers are big, thick, spicy and so delicious. The recipe is not difficult and it is quite healthy too. If you love cheese then go ahead and add a slice or two of cheese as well.
I made these after coming home from an endoscopy. Not that same day but the day after. You see I was stuck at home (as you are not allowed to drive for 24 hours after you have been under aesthetic) and was very bored so I decided to cook whatever was in my fridge. Yes I had housework to do and paperwork to complete (and even worst the clothes that needed ironing were starring at me) but I just wanted to get into the kitchen and cook. I had some mince and quite afew capsicums that I bought in Woolworths from their ‘The Odd Bunch’ section. If you have never bought a net of capsicums, lemons, zucchinis or potatoes from there I suggest you do. It is great value and you are helping reduce the amount of visually imperfect veggies that are thrown out each week. Anyway, all I could think about when I saw these two ingredients was an image I had seen on The Daley Plate’s instagram page. Though I couldn’t find the recipe to her turkey burgers, I decided to create my own version of her photo.
As I am trialling out a grain free diet I used lettuce leaves as my ‘buns’ but the kids and hubby had burger buns and to quote my son “Mummy these are better than McDonalds burgers”, and we all know how much kids love that fast food chain so that is a huge compliment! Enjoy x
1kg beef mince
200g bacon, finely chopped
1 large tomato, peeled, grated
¾ cup almond meal
¼ tsp cayenne powder
¼ tsp garlic powder
¼ tsp ground clove
¼ tsp ground ginger
¼ tsp ground cinnamon
½ tsp sea salt
¼ tsp black pepper
(Alternatively you can add 1 tsp of any Mexican spice mix of your choice)
To serve with:
1 red capsicum, cut into 2cm thick strips
1 yellow capsicum, cut into 2cm thick strips
1 red onion, thinly sliced
Fresh chillies, sliced thinly
Serve with:Lettuce Leaves or Burger Buns
Add to a deep bowl the pattie mixture and the spice mix and kneed until well combined. Shape into approx.180g burger patties and place onto a tray lined with baking paper. Set aside in the fridge to set for 15 minutes.
In the meantime heat up the BBQ and add the capsicum strips. BBQ each side until lightly charred. Set aside on a plate.
Place the beef patties onto the heated BBQ grill and over a high heat cook each side for approximately 6-7 minutes.
Once cooked, remove from the BBQ grill and allow resting for 5 minutes.
Assemble burgers using the lettuce leaves / burger buns, capsicum, onion, pickles and chillies. Enjoy x
Optional: Add cheese and sauce of choice (chilli mayo would be fabulous!)
