A healthy breakfast or snack doesn’t have to be hard and these Apple and Muesli Parfait’s are simple and ready in just 10 minutes. Cleaning out my fridge drawers I found some ripe apples, coconut yogurt, half a pomegranate to which I added my daughter’s muesli and ended up creating this heavenly jar of goodness! I personally added honey to my mixture but my kids enjoyed them just as seen in the photo. What will you be having for breakfast tomorrow?

3 medium size green apples

1 tsp cinnamon

1 tbs lemon juice

800g yogurt of choice (coconut, greek, vanilla bean)

1/2 cup pomegranate seeds

Gluten Free Breakfast Muesli (or granola)

drizzling of honey (optional)

  1. Peel and Chop the apples into diced pieces and sprinkle with cinnamon and drizzle with the lemon juice. Place into microwave container with lid and microwave for 2 minutes. Take out and stir and then place back into microwave for a further minute. Allow to cool for 5 minutes.

  2. In glass jars layer the yogurt, drizzle honey, muesli, apples, pomegranate seeds and repeat to create the parfait.

  3. Serve for breakfast, brunch or in smaller jars for a little after dinner treat!
