BROCCOLI AND TOMATO BITES
These Broccoli Bites are delicious and perfect to serve as finger food to your guests. We personally found them even more tasty the next day when I had packed the leftovers into everyones lunchboxes! Simple, healthy and fun to make, these are a crowd pleaser.

400g broccoli florets
2 tomatoes, peeled, seeded and diced into small pieces
Vegan egg substitute OR 3 eggs whisked
150g vegan cheese, grated OR Tasty Cheese, grated
1/2 cup quinoa flakes
1/4 cup fresh dill, finely chopped
2 tbs gluten free plain flour
2 tbs olive oil
Zest of 1 lemon
2 tsp sea salt
1 tsp freshly ground pepper
Preheat oven 200C fan forced and line with baking paper a large tray.
Place broccoli florets into food processor until resembles crumbs.
Pour into a large bowl and combine all ingredients.
Using a tablespoon form 30 balls or tater-tot shaped bites and place onto baking paper (for a firmer mixture refrigerate for 30 minutes prior to shaping).
Bake for 15 minutes then turn over and bake for a further 10 minutes or until golden. Serve with tomato chutney or sweet chilli sauce.
