CHICKEN SKEWERS WITH CHIMICHURRI SAUCE


Before I begin my little blurb I want you guys to know that this will shoot to the top of your ever-favourite chicken recipe list. These CHICKEN SKEWERS WITH CHIMICHURRI SAUCE are seriously that good! Okay, so you have the marinated juicy chicken pieces sitting amongst the crunchy and fresh vegetable pieces and then drizzled with this spicy, garlic and fresh tasting sauce that brightens the whole meal even further. Tell me you’re not tempted to give it a try… hehehe

Now this meal is not traditionally Greek and it’s not traditionally Argentinian so I will call it a fusion of two beautiful cultures that love to cook and cook with love.

Now I believe a chimichurri sauce is traditionally more chunky but I prefer it more ‘thiner’ so if you prefer the chunky style sauce then reduce the amount of olive oil and increase the fresh herbs. If you are fan of coriander then add that in there too! I don’t believe in strict rules when it comes to cooking. If you like something, then add it is what I say! But also the best thing about this recipe is that is easy, fast and super healthy! It is gluten free, dairy free, sugar free and grain free. Does that make it a Whole 30 recipe? I think it does! Woo Hoo!

Serves 6

Chimichurri Sauce:

1/2 cup cold pressed olive oil

1/4 cup dill

1/2 cup parsley leaves

1/2 tsp dried oregano

1/2 tsp sea salt

1/4 tsp pepper

2 cloves garlic

1 tbs red wine vinegar

2 tbs lemon juice

Chilli flakes

Combine all the ingredients (excluding the chilli) in a food processor and pulse until combined and everything is a saucy consistency.

Chicken Skewers:

1 kg chicken thigh fillets cut into 3cm diced pieces

1 red capsicum, cut into 3x3cm pieces

8 button mushrooms, cut in half

8 brussel sprouts, cut in half

1-2 red onions, cut into wedges

1-2 tbs olive oil

1 tsp oregano (for the chicken only)

Sea salt and Pepper for seasoning

  1. Season the chicken with sea salt, pepper and oregano and place into the fridge while you prepare the vegetables.

  2. Place all vegetables into a large bowl and sprinkle with sea salt and pepper as well plus 1-2 tbs olive oil to coat and combine well.

  3. Thread onto wooden or metal sewers the ingredients in the following order: chicken, capsicum, chicken, brussels sprout, chicken, mushroom, chicken, onion and chicken.

  4. Turn on BBQ and over a medium heat cook skewers 3 minutes on each of the four sides i.e. rotating the skewer 4 times or until the chicken is cooked through.

  5. Place onto a large serving plate and drizzle over with the chimichurri sauce and sprinkle with chilli flakes.
