Smashed Potatoes

Poor little potatoes have such a bad reputation. They do not behave like other vegetables once we consume them but the fact is that they are a whole food and a plant and they are delicious and good for you. Furthermore, did you know that potatoes are a complete source of protein? - though a relatively low percentage of protein - they also contain all of the essential amino acids too! Could you ask for anything more?

So a few weeks ago I decided to create a potato dish that I believe everyone will enjoy. Twice cooked, these SMASHED POTATOES WITH ROSEMARY AND GARLIC are easy, fast and so delicious! Now if you haven't had smashed potatoes before, you're in for a treat! It’s the best kind of potato side dish that you will eat. They are fluffy on the inside and crispy on the outside. They are so delicious that you’ll want more than one. I had three!!! Hope you give these a try. Enjoy x

Served as a side dish for 6-8 people

1kg baby white potatoes, washed

4 tbs olive oil + extra for drizzling

2 garlic cloves thinly sliced

1 red chilli thinly sliced (optional)

handful of fresh rosemary leaves

sprinkle of garlic salt

sea salt flakes


  1. Place potatoes in a large pot and cover with water. Season with salt and bring to boil. Simmer for approximately 20 minutes or until fork tender.

  2. Drain and allow to cool.

  3. Preheat oven to 200C fan forced and prepare baking dish with baking paper.

  4. Place potatoes onto tray and using a fork or potato masher, press down lightly until the potato begins to flatten and crack at the ends.

  5. Drizzle with olive oil, season with sea salt, pepper, garlic salt, slices of garlic and rosemary leaves.

  6. Bake in the oven for 20 minutes or until golden brown.

  7. Serve hot and garnish with chilli slices, an extra drizzle of olive oil and freshly ground pepper.

  8. Optional: For some Greek influence, add a sprinkle of dried oregano over each potato. It’s delicious!
