BLUEBERRY DESSERT PIZZA


Yes. I also love nutella pizza but sometimes you just want a lighter version. This idea came about from a dessert I used to make called Ricotta and Blueberry Triangles which I can no longer make as it needs filo pastry. Since we are a gluten free household…. well that’s out the window! So what better way to combine those flavours than on a pizza! This recipe will surely surprise you as it’s light and fresh yet filling and somewhat savoury.

I made it for a friend of mine who came to visit for brunch and she loved it. I hadn't seen her in a very long time and wanted to cook something because I feel it makes the occasion more special. Throughout the morning I realised how long it was since the last time we caught up and I became nostalgic. Both our lives had changed so much, and so much had happened that there wasn’t a moment to breathe between conversations. Interestingly, we ourselves hadn't changed much. We both were silly girls chatting away just like we used to and laughing at the same silly jokes which only we could understand. Though we kept in contact through social media, it just isn't the same as giving each other a warm embrace and making each other laugh. Who doesn’t love to hear laughter out loud compared to seeing a laughing emoji? Anyway, it was a lovely morning tea and I must promise myself to see more friends in person!

Makes 3 medium size pizzas

Prep Time: 30 minutes

Cooking Time: 15 minutes

1 pkt Orgran Pizza and Pastry Multimix, prepared by following packet instructions

200-250g ricotta

50g goats cheese, crumbled

250g fresh blueberries

2 tbs honey

2 tbs olive oil + extra to brush pizza bases

handful of baby rocket

freshly ground pepper

Optional: drizzle gluten free balsamic or sweet vinegar once cooked

  1. Preheat oven at 200C fan forced.

  2. Prepare pizza dough as instructed on packet and place onto pizza trays lined with baking paper.

  3. Add to a bowl the ricotta, goats cheese, pepper and olive oil. Using a fork combine well.

  4. Brush onto the pizza bases olive oil and then spread the ricotta mixture.

  5. Spread evenly the fresh blueberries and drizzle with a little honey (you can add more honey after the pizza has been cooked).

  6. Cook in over for 15-20 minutes until some of the blueberries have just blistered and pizza base is cooked.

  7. Remove from the oven and drizzle more honey, and sprinkle with fresh baby rocket leaves.

  8. Serve warm.
