ONE BOWL CUSTARD CAKE WITH PASSIONFRUIT ICING
Sometimes you just need a simple cake that tastes great and is easy to put together.
This is that cake! Enjoy x
Serves 6-8
Prep and Cooking: 45 minutes
Cake:
180g GF Self-Raising Flour
4 tbs GF Custard Mix powder
120g butter or dairy free alternative
150g milk or dairy free alternative
2 eggs or GF Egg Replacer
½ cup caster sugar
½ tsp vanilla essence
¼ tsp ground cinnamon
Passionfruit Icing:
2 passionfruit
2 ½ cups icing sugar
20g butter (or dairy free butter) at room temperature
½ tsp milk or rice milk
Preheat oven to 180C fan forced.
Add all ingredients to a deep bowl and using a hand held mixer, whisk for 3 minutes.
Pour into cake tin lined with baking paper and place in oven for 30-35 minutes.
Allow to completely cool.
Prepare passionfruit icing. Add all ingredients in a bowl and whisk until smooth. Place into fridge for 10 minutes. Pour icing over cake. Allow to set before serving.
