CHOC-O BLISS BALLS
Whenever I am asked to create a recipe using a product, the first thing I try to do is make it as easy as possible to cook. Everyone loves a quick and easy recipe! Well the reason this recipe goes one step above is because it is fun for kids to get involved in the process too (you should have seen my daughter trying to roll the ball mixture ...hehehe)
As most of you are aware, my daughter is coeliac so a product like Orgran is heaven sent. This Kids Cacao-O breakfast cereal is her favourite (has a coco pops taste and crunch) and so when I was asked to do something creative with it, she was VERY excited.
"Mumma, make a kids dessert with it!" she told me, and so that's what we did. These Choc-O Bliss Balls are not only nutritious but are delicious and best of all can be kept in the fridge for weeks. We've personally had one as a late night treat when you get that chocolate craving (I know that is not when you are suppose to be snacking... but it is a better alternative to chips and chocolates. Well that's what I've said to tried to convince myself).
If you are not coeliac, I am sure you can use any other cacao based cereal to whip these up though they won't be as nutritionally beneficial as this Kids Cacao-O cereal. Hope you give them a try. Enjoy x
PS. If the mixture is too crumbly, just add more coconut oil.
Makes 15 bliss balls
2 cups Orgran Cocoa O’s
2 tbs nut butter (I used almond)
10 dates, seed removed and cut in half
1/3 cup melted coconut oil, completely cooled
2/3 cup desiccated coconut
½ tsp vanilla
In a food processor, add the Cocoa O’s and pulse until resembles crumbs.
Add all other ingredients and blend until well combined.
Roll into small balls (If mixture is too crumbly, then add a couple of tablespoons of coconut oil)
Place on a tray lined with baking paper and pop into the fridge to set for 2 hours. Enjoy cold.
You can store them in the fridge and in an airtight container for a few weeks
