Mediterranean-Style Bread

I believe the hardest part of my daughter being coeliac was finding delicious tasting bread. We would sometimes travel an hour drive away to a small bakery that baked the best gluten free home style bread and yes it was totally worth it. It wasn’t until I discovered Orgran’s Premium Bread Mix that I started baking bread of my own at home and my daughter and I were never disappointed. I am being completely genuine when I say it reminds me of my mum’s old-style home made bread that she used to bake when I was a kid only this is gluten free! Yes, it truly is that good until one day I decided to add baby spinach, feta, sundried tomatoes and oregano to the mix. Holy Moly it was good! So here I share with you my MEDITERRANEAN-STYLE BREAD recipe. Hope you give it a try. Enjoy x

1 pkt Orgran Premium Bread Mix

395 ml warm water

5g dried yeast

50ml vegetable oil

1 cup baby spinach, chopped

80g feta, crumbled (or 50g vegan feta)

60g semi-sundried tomatoes, cut into small pieces

½ tsp dried oregano

  1. Prepare bread according to packet instructions. Add all ingredients into bowl (bread mix, water, yeast, oil) and mix with hand held mixer using a dough hook for 2 minutes.

  2. Add the spinach, feta, tomatoes and oregano and combine for another minute.

  3. Spoon into a greased loaf tin and proof in warm area for 45 minutes.

  4. Preheat oven to 180C fan forced and bake for 40 minutes.

  5. Remove from tin as soon as possible and allow to cool on wire rack for 1 hour before slicing.
