Silverbeet Pancake Omelette

We are one of those families that have several family members on a variety of diet choices. Some are gluten free, some are dairy free, some are paleo, some are vegetarian, some are lactose intolerant, some eat meat but can't stand the smell of pork, some eat seafood but do not eat fish and some eat everything and anything. When my family gather at my house or mum's, we are often cooking several different meals to cater for all. It is not unusual to see baked vegetables, gluten free spinach pie, roast lamb, greek salad with feta on the side, vegetable skewers, chicken ones too and pesto pasta all on one table to make all my brothers, their wives, grandkids, my kids and husband happy (mum is the only one who isn't picky!LOL).

Someone once asked me whether it was a hassle or annoying to have my extended family over and cater for everyone's needs. My answer was a huge NO. I adore my awkward family with all its good attributes and all its faults, including how picky we all are. It is always a huge joy to fuss over them and present my best food to them and hear in return how delicious it is. It is one of my most heart warming moments even more so after our father passed away (when you realise we will not always be together).

I am telling you this story people have asked me why I offer paleo, vegan, dairy free options when I don't need to eat vegan. We unfortunately live in a world that allergies and intolerances are more frequent and it is nice to have options available. Similarly, it is important to respect the food choices people make whether it be by choice or necessity. This SILVERBEET PANCAKE OMELETTE is a perfect example. Luckily in Australia, Orgran have a vegan alternative to eggs which makes this dish so easy to make and super delicious. You'll also find in the recipe a paleo version, a dairy or dairy free version as well. It's not hard to adapt most recipes so if I can offer an alternative, it will be there. Serves 2

Cooking and Prep Time: 15 minutes

Choose Vegan or Paleo Option

Option 1: VEGAN

100g ORGRAN Vegan Easy Eggs

480ml water

5 tsp vegetable oil

2 tbs coconut milk (fresh or canned)

sae salt, pepper

Option 2: PALEO

6 eggs, whisked

4 tbs coconut milk, fresh or canned Or milk

sea salt, pepper

Add to choice of Omelette:

4 silverbeet leaves, stems removed and shredded

1 clove fresh garlic, minced

2 tbs olive oil

Salad Topper:

1 large red banana pepper, cut into long strips

1 tsp olive oil

½ small red onion, thinly sliced

1 cup watercress salad leaves and stems, washed and cut

2 tsp balsamic glaze or coconut amino sauce


  1. Prepare the vegan eggs or chicken eggs by whisking the ingredients together. Add to your choice of omelette the silverbeet leaves, garlic and olive oil. Set aside.

  2. In a frying pan add the teaspoon of olive oil and the red banana pepper and grill for 1-2 minutes. Take off heat and place onto a plate to cool down.

  3. In the same pan, add half the amount of whisked eggs and spread around the pan to form a flat pancake. Cook each side over a medium heat for 2-3 minutes. Repeat with remaining mixture.

  4. Place pancake omelette onto plate and top with red banana peppers, watercress salad, red onion, drizzle with balsamic glaze and season with pepper.
