STRAWBERRY SALAD
I don’t think I can remember eating strawberries when I was a child. I don’t know whether it was because my parents never bought them (which wouldn’t surprise me because they didn’t like them) or whether it was because I just can’t remember it. In my household, a punnet of strawberries and blueberries is eaten in 2 days and my kids don’t go a day without asking for a couple. They have been absolutely delicious this season and full of flavour so when the next #foodphotoinsta challenge by @thelittleplantation came up to create a green salad, I was definitely going to include strawberries in the recipe. This STRAWBERRY SALAD is sweet, tangy, peppery and just delicious! It has a simple dressing which allows the berries to shine and the peppery rocket adds another element to the overall flavour. This is the first time I created this recipe and didn’t bother to try a different combination of flavours because the family said it was great just as it is. I love getting the approval raised eye brows and nodding of the heads when I ask whether it was good enough for @instagram. Enjoy x
Serves 4
100g baby spinach
100g rocket
250 strawberries, quartered
125 blueberries
2 tbs sunflower seeds
½ red onion, thinly sliced
Optional: ½ avocado, cubed
Dressing:
2 tbs olive oil
1 tbs red wine vinegar
2 tbs lemon juice
sea salt / pepper
Clean and dry all salad ingredients and combine in a bowl.
In a small bowl whisk dressing ingredients and pour over salad. Toss.
Serve immediately.
