SWEET POTATO WRAPS
Raise your hands if you find it hard to find a delicious, soft and ‘bendy’ glutenfree wrap that doesn’t break the moment you try to fold it over? Yes, there are a few out there that are quite good but making your own and serving it warm is sooo good! And put your hand up if you have eaten far too much over the festive season? (I think I need to raise both my arms for that one) Well these virtually fat free wraps are for you! AND only two ingredients. Sweet Potato and GF Flour (ok and the seasoning but you can leave that out).
My Hubs said if I made these everyday, he would eat them so I thought that means they are good enough to share on the blog too. My son loved them with a spreading of butter, my daughter with cheese and salad and my husband just pilled everything and anything onto them LOL And even though it has been another hectic week that has exhausted me, I made these twice because they were damn good! Good Food is definitely back and now to arrange an early exercise session to fit in. I’ll need to get to bed earlier than 1am! Enjoy x
Prep and Cooking: 40 minutes
700g sweet potatoes
400-450g plain gf flour + extra for dusting
½ tsp sea salt
½ tsp pepper
pinch garlic salt
olive oil spray
Peel, dice and boil sweet potatoes until tender (approx. 15 minutes). Drain and allow to slightly cool.
Using a fork, mash and then allow to completely cool down.
Combine with flour and seasoning in a wide base large bowl that is big enough to kneed. You will need extra flour for dusting as it can be quite sticky! Combine well.
Divide into 10 pieces and roll into a ball. Using baking paper and flour for dusting roll out each ball between 2 sheets of paper into a flat wrap.
Spray each side with olive oil and fry on a hot frying pan for 1-2 minutes each side.
Serve warm with a light spread of butter OR with toppings of choice, including spreads and salads OR with Mexican–style fillets and vegetables.
