STRAWBERRY PASTA SALAD
MeatFree Monday doesn't have to be boring or tasteless! Try this Strawberry Pasta Salad which has been a life saver on those busy nights that I need to whip up something fast, fresh and delicious.
Have you ever added fruit to your salad? During my childhhood, salad meant iceberg lettuce, tomato, cucumber, feta and olives. Not that there is anything wrong with that but the addition of some rockmelon or blueberries would have given the salad the perfect ZING it needed. These days, salads in our household means more than just lettuce and tomato....in fact it is a meal rather than a side dish and this pasta salad is exactly that. It fills you up and satisfies you. Serves 4
Prep and Cook: 20 minutes
250g packet Orgran Penne Pasta
100g baby spinach
100g rocket
250 strawberries, quartered
125 blueberries
2 tbs sunflower seeds
½ red onion, thinly sliced
Dressing:
3 tbs olive oil
1 tbs red wine vinegar
3 tbs lemon juice
sea salt / pepper
Clean and dry all salad ingredients and combine in a bowl.
Prepare pasta according to packet instructions. Drain and allow to slightly cool. Add to bowl with all other ingredients.
In a small bowl whisk dressing ingredients and pour over salad. Toss.
Serve immediately.
