NUT-FREE ROCKY ROAD
“Why do we have to wait for Easter to eat Rocky Road? Let’s make it today!” my kids began telling me one morning. So… we made rocky road! I’ve always made a big batch and stored the bite size pieces in an air tight container in the fridge. This time I cut the pieces a little larger and actually preferred them because it stopped me from going back for more. One piece was just enough to satisfy that sweet craving…. And by the way, I make no apologies about the sugar in this recipe. If you are going to have Rocky Road, it has to be packed with all the naughty stuff.
Now most Rocky Road recipes have peanuts or macadamia nuts in them but since our schools in Australia are a nut-free zone I have replaced them with broken pieces of Orgran’s chocolate biscotti (which is nut free and vegan) and pepita seeds. I know this sounds unusual but trust me it fits in perfectly and to add to this combination I’ve added goji berries which makes the rocky road not only crunchy but chewy.
Now for my vegan friends and friends who have given up chocolate for Lent, you have the option to make this recipe vegan by replacing the white chocolate with vegan white chocolate. It turns out just as good!

450g white chocolate or dairy-free white chocolate
1 pkt Orgran Classic Choc Biscotti, broken into chunks
150g gf mini marshmallows
2 tbs pepita seeds
2 tbs dried goji berries
1 tbs chia seeds
Line a tray 20x20cm with baking paper.
In a glass bowl add the white chocolate and melt by placing over a pot of simmering water. Stir until completely melted. Take off heat and allow to sit for 3 minutes.
In a large bowl add all the ingredients and pour over the melted chocolate. Stir and combine well.
Pour into the tray and spread out evenly. Sprinkle over the top a little extra chia seeds and goji berries for decoration. Place into fridge for at least 3 hours.
Cut into squares. Will remain fresh for 2 weeks in fridge in an air tight container.
