Pizza Crusted Broccoli Steaks

I’ve had a few issues with my son, eating broccoli lately. I remember at his age I hated most cooked vegetables but I really can’t give up on trying to get him to eat the green stuff. He loves cucumbers, carrots, mini tomatoes, raw beans and even capsicum but as soon as I place a vegetable in front of him that is cooked he says to me “Mummy! I will try it and that is nice of me to do for you but I’m not eating it all” I can’t argue with that because at least he is willing to take a bite.

So, this is another attempt at making a cooked vegetable into something appealing for him to eat. How did we go? Pretty good! He ate half and then said “I really like it but I prefer a steak”. I couldn’t help but laugh and give him a hug.

So I made these Pizza Crusted Broccoli Steaks by pulsing a few snack packets of Pizza Flavoured gluten free SMAXX Chips in a food processor and making them the crumb. It was absolutely delicious and made the broccoli actually taste pizza-ish… now that’s a new word for you! These are also great for lent (sarakosti for my Greek friends) if you use egg replacer instead of the eggs we normally use to crumb. The recipe again has an egg option and a egg-free vegan option. Maybe there are a few mums out there that experience the same problem that I do, so I hope you give these a try! ENJOY x

Serves 4

Preparation: 10 minutes

Cooking 20 minutes

Egg-Free Vegan Option:

2 broccoli heads, cut into 2cm thick slices

4 packets Orgran Pizza SMAXX crunchy snacks

3 tsp Orgran Egg Replacer

6 tbs water

Egg Option:

2 broccoli heads, cut into 2cm thick slices

4 packets Orgran Pizza SMAXX crunchy snacks

1 egg, whisked + 2 tbs milk

  1. Preheat oven to 180C fan forced. Arrange a tray with baking paper.

  2. In a shallow bowl, combine egg replacer and water and whisk OR for egg option whisk egg and milk in a bowl.

  3. Place pizza snacks into a mortar and pestle and break down to resemble crumbs (or a food processor can be used). Tip into a shallow bowl.

  4. Set up the broccoli on one plate, the egg replacer / eggs next to it and finally the pizza crumbs.

  5. One at a time, dip both sides of the broccoli into the “egg” then into the bowl with the crumbs. Firmly press the crumbs into broccoli to create a thick crust on each side. Place onto the tray.

  6. Repeat with remaining broccoli steaks.

  7. Bake for 20 minutes. Serve with chosen side dish including steamed rice, steak, or a green salad.
