ALMOND COFFEE BLISS BALLS
Is it just me or is the bliss balls craze still going on? These little bite size balls are more popular than ever and loved by so many so I don’t think their popularity will be going anywhere.
These bliss balls are also known as energy balls, protein balls and even fat bombs. They are eaten as a snack or even as a meal replacement (though I prefer them as a snack). It wasn’t until recently that my children have started preferring them to chocolate so I am always trying to come up with different flavours. Now I don’t always cook just for my kids so I wanted to create an ‘adult’ bliss ball and since I am a coffee addict, I decided I wanted the coffee to be the prominent ingredient. I combined dates, cashews, almond, almond butter, maple syrup, coffee, cacao and chia seeds to produce these little balls and trust me they are delicious! In fact the coffee hit is so good that they’ve become my 3 o’clock-itis rescue snack! (Anyone else suffer from this?)
So, whether these bliss balls are as nutritious as we believe they are, I’m a huge fan of them and anyhow, how can you go wrong with almonds, cacao and coffee?
150g dates, pitted
100g raw cashews
50g Barney’s Almond Peanut Butter
50g maple syrup
50g linseed meal
2 tbs ground coffee
2 tbs raw cacao
1 tbs chia seeds
Place all ingredients in a food processor or Thermomix and process and blend until all the ingredients come together.
Using a teaspoon, scoop some of the mixture and roll into 2cm bite size balls.
Store in an air tight container in the fridge up to 4 weeks.
