Pear and Sultana Loaf Cake

One of my favourite cakes is Christmas cake. I think it is the combination of spices, dried fruit and most importantly the moist yet dense texture. Well this FRESH PEAR AND SULTANA LOAF CAKE reminds me of a ‘fresh’ version of Christmas Cake. We all loved it and in fact we ate the whole loaf in a day (so embarrassed to write that but it’s true). It is probably my favourite cake that I have ever baked. Give it a try, it’s easy, delicious and so moist. Enjoy x

Serves: 8

Preparation: 10 minutes

Cooking: 40 minutes

3 large pears

150g dates, seeds removed

150g almond meal

100g GF self raising flour

3 eggs OR equivalent egg replacer

3 tbs coconut oil

2 tbs sultanas

1 tbs maple syrup

1 tsp apple cider vinegar

½ tsp ground cinnamon

½ tsp ground cardamom

  1. Preheat oven 170C fan forced. Line a loaf tin with baking paper.

  2. Peel and dice 2 ½ of the pears, whilst leaving ½ a pear to cut into slices for decorating the top of the loaf (as seen in photo).

  3. In a pan, add the coconut oil and diced pears. Over a medium heat, simmer for 3 minutes. Take off heat and allow to cool.

  4. In a food processor or thermomix, add the dates and pulse until chopped. Then add the almond meal and self-raising flour and pulse until just combined. Set aside.

  5. In a large bowl add the eggs or egg replacer and vinegar. Whisk. Then fold in the date and flour mixture, the coconut / pear mixture, the sultanas, maple syrup and spices. Combine well.

  6. Pour mixture into prepared tin and decorate with slices of pear.

  7. Bake for 40 minutes or until cooked though. Do not over cook as will dry. Allow cooling in pan for 15 minutes before removing.

  8. Serve warm or at room temperature. Enjoy x
