In order to appreciate what a zoodle is, you mustn’t compare it to noodles. I must admit I actually dislike that word ZOODLES. Let’s face it, they are nothing like noodles or pasta but one thing they are is delicious. If you don’t actually think of grain based noodles when eating these, they actually are a fantastic way to get vegetables into your diet. Believe me when I say, I look at my kids with an open mouth and in disbelief when they ask to try it. So based on that, they also look good. I mean how cool is it to transform a boring zucchini into a noodle? So with my zoodles, I always make this herb bolognese sauce. It is full of flavour and coats the zucchini perfectly. Just make sure you season the zoodles well to get the full flavour of the sauce. Enjoy x

Serves 2-3

500g beef mince

1 tbs EVOO

1 large onion, diced

4 garlic cloves, minced

2 tomatoes, peeled and diced

1 cup parsley, finely chopped

¼ cup basil leaves, finely chopped

1 tsp dried oregano

½ tsp dried marjoram

sea salt / pepper (a good amount of both)

300-350g jar napoletana sauce (feel free to use a home made sauce)

2-3 large and wide green zucchini, outer skin peeled

extra basil leaves for garnish

  1. Place the oil and mince into a pot and cook over high heat. With a wooden spoon, break up mince. Keep cooking until all liquid has been absorbed and mince is browned. Now add the onion and garlic, reduce heat and sauté.

  2. Add the parsley, basil, oregano, marjoram, sea salt, pepper and tomatoes and further sauté for a few minutes.

  3. Finally add the napoletana sauce. Bring to boil and then reduce heat. Cover and simmer for 15-20 minutes, checking and stirring at 5 minute intervals.

  4. Now for the zucchini. Make sure you have used a potato peeler to peel the green outer layer of the zucchini. You can add this to an omelette or any other dish. The zucchini noodles need the inner white flesh.

  5. Following your spiraliser instructions, make the zoodles.

  6. You have the option to leave the zoodles raw or sauté them for only a couple of minutes in a pan with a little avocado or olive oil. Season.

  7. Combine zoodles in bowl with herbed bolognese sauce. Combine well and serve hot. Enjoy x
