VEGETABLE NOODLES WITH THAI ALMOND SAUCE


Are you the person who wants comfort food for lunch but you know the right thing to do is to eat a healthy salad? This then is the meal for you. Raw vegetables spiralised into noodles then coated in a creamy, nutty and spicy sauce and then topped off with an explosion of fresh chillies, crunchy almonds and sesame seeds. Trust me, its good. Enjoy x

Serves 2

2 medium zucchini, peeled

1 large carrot, peeled

2 green onions, sliced on an angle

2-3 tbs Yai’s Thai Almond Sauce*

1 tbs sesame seeds

¼ cup flaked almonds

1 red chilli, sliced on an angle

  1. Spiralise the zucchini and carrot using a spiraliser. Set aside in a deep bowl.

  2. Place sesame seeds and almonds on a baking tray and place in oven at 160C fan forced for 5 minutes or until lightly toasted.

  3. Toss the “noodles” with the sauce and sprinkle all over the sesame seeds, flaked almonds and green onions. Garnish with slices of red chilli. Enjoy x
