How good is halloumi! Now if you didn’t agree, I will amicably say that we have to agree to disagree because I could have halloumi all the time. Now raise your hand if you like Brussels sprouts? Hmmmm I don’t see many hands being raised…

Well believe it or not brussels sprouts are making a big come back. Long gone are the years of simply boiling them (and the house smelling like someone just farted!) People are now coming up with a variety of ways to cook them (one of which I saw recently was crumbed and deep fried!). Since most of the time I have baked them, it made me think to do something new and different. Why not barbecue them?

I started with small brussels sprouts because I wanted them to be bite size. I cut them in half and set them aside ready to BBQ. Then the halloumi. I sliced it in 1cm thick pieces and after I barbecued the slices, I also cut them into bite size pieces to fit inside the brussles sprouts. Now the easy part. Assemble and drizzle with lemon juice, pepper and raw honey. Pure magic! The flavours go so well together. Sweet and sour, crunchy and smooth. I hope you give them a try. Enjoy x

16 small Brussels sprouts, cut in half

200g halloumi, sliced 1cm thick

fresh lemon juice

raw or organic good quality honey


  1. Heat up the BBQ (you can use a skillet if you do not own a bbq) and place the Brussels sprouts (cut side down) onto the grill. Barbecue until begins to char and then turn over to cook the other side. Take off heat and set aside.

  2. Place halloumi slices onto grill, and over high heat cook until begins to char as well. Turn over and cook flip side. Take off heat and allow to cool before cutting the slices into squares to fit between the Brussels sprouts.

  3. Assemble the mini burgers by skewering half the Brussels sprout on a toothpick followed by the halloumi and then again the top of the Brussels sprout.

  4. Place onto a serving plate and squeeze lemon juice over, then a good drizzle of honey and sprinkling of pepper.

  5. Enjoy!
