A simple and easy recipe that we love and I hope your family loves it too! If you prefer a milder spiced potato, then leave out the cayenne powder. Enjoy x

Potato Mix:

1kg potatoes, peeled and diced into 3cm cubes

¼ tsp cayenne powder

¼ tsp garlic powder

¼ tsp cumin powder

¼ tsp pepper

½ tsp chilli flakes

½ tsp sea salt

2 tbs olive oil

Tahini Sauce:

¼ cup tahini

1 heaped tablespoon maple syrup

1 tbs lime juice

1 tbs water (extra if too thick)

½ tsp mustard

To garnish: finely chopped chives

  1. Preheated oven at 190C fan forced. Line tray with baking paper.

  2. In a deep bowl, combine potatoes with spices and olive oil and place onto tray and into the oven for 25-30 minutes.

  3. In the meantime, combine all the tahini sauce ingredients and whisk until smooth. You may need to add more water if sauce is too thick.

  4. Once cooked serve on platter with sauce on the side and garnish with freshly cut chives. Enjoy x
