I have always wanted to try a vegan chocolate mouse or icing so I took the opportunity to make Orgran’s chocolate cake and top it with this Avocado Icing. I was so surprised at how good it tasted! I always tell you guys the truth as to who in the family loved it or hated it. Kids loved it so much they asked to lick the spoon! But my husband wouldn’t have a bar of it! He actually scrapped it off! OMG it was hilarious! I expected the opposite. But to be fair, my husband doesn’t like avocado much and the kids LOVE it. Makes sense … right?

Definitely worth giving it a go and especially nice to know there is an option for vegans or even for us during lent! Happy day to you all. Enjoy x

1 pkt chocolate cake mix

220g ripe avocado flesh

2 tbs cacao powder

2 tbs agave syrup 

2 tbs melted coconut oil

¼ tsp vanilla bean paste

10 large strawberries

10 rasberries

10 blackberries

fresh mint leaves

  1. Prepare cake according to packet instructions.

  2. Prepare avocado icing by combining in a food processor the avocado, cacao powder, agave syrup, coconut oil and vanilla paste. Pulse until smooth.  Pour into a bowl and place into fridge, covered for 15 minutes.

  3. Spread icing onto cooled cake and top with fresh berries and mint leaves. 

  4. Recommended to serve icing cold and not at room temperature
