QUINOA AND SEEDS BARS

The best part about these Seed and Quinoa Bars is there is no baking! Yep, these vegan, raw treats are delicious, healthy and anyone can make them including children. What I love most is that you can adapt the recipe to add any nuts or seeds you prefer. If you decide you prefer almonds instead of sunflower seeds, then substitute it. However if you are making these for kids, keeping them nut free means they can take them to school for morning tea.

Makes 24 large size bars
200g quinoa puffs
260g honey or rice malt syrup
160g desiccated coconut
180g coconut oil, melted and cooled
80g sunflower seeds
80g pepita / pumpkin seeds
½ tsp vanilla bean paste
Optional: melted white chocolate to drizzle


Place all the dry ingredients into a bowl and combine.
Pour over the wet ingredients (honey, coconut oil, vanilla) and mix until well combined.
Arrange a tin, lined with baking paper and pour mixture into it. (To ensure mixture sets well, place baking paper over mixture and use a book to press down on it)
Place into freezer for 3 hours to set.
Slice and store in containers in freezer for up to 3 weeks.
