Mexican Tuna Boats

So many of you on Instagram asked me for the ingredients of these Mexican Tuna Boats ...

Yes they are so delicious! 

A great lunch or snack meal and if you want to add a grain I suggest a simple bowl of steamed rice or quinoa goes beautifully and you've got dinner ready in no time.

Serves 2 

2 medium-large Avocado, sliced in half

180g Tuna, canned in olive oil/brine or spring water

2 tbs EVOO

1 tbs fresh Lemon Juice

1/4 cup Baby Grape Tomatoes, sliced in quarters

1/8 cup Red onion, finely diced

1/3 cup Corn (I used leftover corn I charred on the barbecued)

1/2 tsp ground mexican spice

(combo of paprika, cumin, coriander, cayenne pepper) 

1/2 tsp chilli flakes

fresh coriander leaves

fresh mint leaves

Combine everything in a bowl and load each avocado half with the tuna filling.
