One Bowl Grain Free Banana Bread
Banana Bread has gone through many changes over the years. It began using white flour and plenty of butter and sugar, then we changed it to using wheat flour and then we changed it to suit the dietary needs of those with coeliac disease by using gluten free flours. Well now the change was made to suit my temporary grain free diet, which I am trying to stick to and see what specific grains are bloating me. Going through this process won’t stop me from baking a yummy loaf of Banana Bread so I experimented and this is what I came up with. Now it’s not perfect but it’s yummy. Even better the next day I heated it in the microwave and it was still moist and DELICIOUS!
Best of all it is quick and easy to make (a one bowl favourite) and it has no sugar or grains! I hope you will try this recipe in its original form and then add ingredients to it and make up your own version. You can add ¼ cup of honey, a handful of walnuts or even ¼ cup of self raising flour just to give it more of a spongy texture. Either way, the original version is super healthy, tasty and ready in 40 minutes. Enjoy x

220g (2 cups) almond meal or hazelnut meal
2 large ripe bananas, peeled
100g coconut oil
40g ( ½ cup) coconut, shredded
1 tbs maple syrup
1 ½ tbs peanut butter or any nut butter
1 tsp baking powder
1 tsp vanilla paste
½ tsp ground cinnamon
pinch of sea salt
SERVE WITH honey, maple syrup or butter.
Preheat oven to 180C fan forced and lines a loaf tin with baking paper.
In a thermomix or food processor add all the ingredients and whisk until well combined (approx. 2 minutes)
Pour into prepared baking tin and bake for 40-45 minutes.
Allow to cool on wire rack. Serve warm with a drizzle of honey, maple syrup or fresh butter.
