Zucchini Slice with Feta
Of course zucchini slice has to have feta in it! It’s a Greek zucchini slice! ;) I think if I look back, most of my recipes have feta and this is no exception. A crowd pleaser that has stood the test of time and an important part of any Aussie/Greek dinner party. Enjoy it on its own or add some extra veggies for something different, either way you will love it and so will the kids!
Talking about kids. OMG, what a year 2019 has been so far! Is it just me or is it flying by? School holidays have come and gone and work just keeps piling and I am already feeling the pressure of everyday life. Having promised myself as a New Years Resolution that I would begin taking care of myself, this has not occurred. When did life get so busy that we cannot even find the time to sit and have a conversation with a friend or neighbour?
Our amount of time has not changed. We still get 24 hours in a day and we now have modern conveniences such a dishwasher, dryer and even vehicles to get around quickly. These have shaved off hours of home duties time each week, yet the amount of hours needed to work and run around each just seems to increase.
And as I sit here on my computer typing this up I realise busy-ness is mostly a by-product of the digital age. Our 24 hours a day connection to our devices is filling in the gaps of each day that we would usually be doing the things that makes life slow down rather than continuous multitasking. You know, the little things. Talking to our neighbour, spending time reading a book with the kids, going for a leisurely walk and even sitting under a tree watching the world walk by.
The funny thing is that we use technology as a way of ‘escapism’ from the stresses of life to only realise when we lift our head up to face the world again, everything is still there waiting for us.
Taking all that on board, I will have to make an effort to spend less time on my phone and more time outdoors or at least make relevant the time I am on the phone rather than wasting it Googling rubbish. In the meantime, I will sit back, pour myself a cuppa coffee and enjoy a slice of this delicious Zucchini Slice with Feta. Enjoy x
500g zucchini, grated and liquid squeezed out
200g feta, crumbled
8 organic eggs, whisked
2 cloves garlic, crushed
1 large onion, finely chopped
3 spring onions, finely chopped
3 tbs extra virgin olive oil
80g parmesan cheese, grated
50g flour, sifted (GFree)
1 tsp dried greek oregano
1 tsp freshly cracked pepper
Preheat oven to 180C fan forced.
Lightly grease a 30x20cm tin and line with baking paper.
Place all ingredients in a bowl and combine well. (Only add half the parmesan cheese as the other half will be used to sprinkle over the top before baking).
Pour into tin and evenly spread out. Top with the remaining parmesan cheese.
Bake for 45 minutes or until cooked through and golden.
Allow to slightly cool before slicing.
