Zucchini Slice with Feta

This is a versatile dish made with zucchini, feta, eggs and extra virgin olive oil. Enjoy it with a salad, as a snack on its own, or serve it as an appetiser.

Zucchini Slice with Feta

500g zucchini, grated and liquid squeezed out

200g feta, crumbled

8 eggs, whisked

3 cloves garlic, crushed

1 large brown onion, finely chopped

3 spring onions, finely chopped

3 tbsp extra virgin olive oil

4 tbsp parmesan cheese, grated

50g gluten-free self-raising flour (use millet flour, coconut flour, or cassava flour for grain free)

1 tsp dried greek oregano

1 tsp freshly cracked pepper


  1. Preheat oven to 180°C fan forced / 200°C conventional oven / 400°F

  2. Lightly grease a 30x20cm baking tin and line it with baking paper.

  3. Place all ingredients in a bowl and combine well. (Only add half the parmesan cheese as the other half will be used to sprinkle over the top before baking).

  4. Pour into the baking tin and evenly spread out. Top with the remaining parmesan cheese.

  5. Bake for 45 minutes or until cooked through and golden.

  6. Allow to slightly cool before slicing.
