One Pot Noodles with Chicken in a Creamy Sundried Tomato Sauce


Golden fried chicken with soft noodles and a creamy sundried tomato sauce is exactly what you will get and doesn’t it sound amazing? Simple and delicious (maybe that’s what I should have called my blog!)

When I am looking for new ways to recreate old favourites, I tend to go wandering through the farmers markets or the local supermarket to find something that will spark my interest. This time I was looking for something that would soak up one of my favourite sauces: Creamy Sun Dried Tomato Sauce. I had cooked this recipe with zucchini noodles and I had cooked it with rice noodles but when I discovered sweet potato noodlesI was intrigued.

The kids were immediately against the idea that a noodle can be made from sweet potato and so the challenge was on. Into the trolley it went and off home to cook this One Pot Noodles with Chicken in a Creamy Sundried Tomato Sauce. I wasn’t going to let them know it was the sweet potato noodles until they tried it and gave me the verdict as to whether they were delicious or not.

You know the answer, right? Oh my holy goodness these were amazing! First bite and both kids eyes opened wide like a switch was turned on. You’ll have to check out my Instagram stories to see them. Loved it! But of course when I told them it was the sweet potato noodles they were cool as cucumber saying they never discriminated against sweet potato noodles (My daughter would deny anything if it meant she would be proven wrong LOL)

Like most noodle dishes, this is very simple but what makes this stand out is that there is no need to cook the noodles separately. All in one pot it goes just make sure it is a broad and wide base pot, or even a deep frying pan as most have a wide base. This allows the noodles to sit submerged in the sauce for them to soften and cook. If you find it needs more water or cream (depending on how creamy you want them) then add half a cup more.

Oh, and if you have already tried sweet potato noodles and prefer rice noodles, then go ahead and do that. I don’t believe it will need much more or less liquid and it would taste just as good.

Serves 4

600g chicken thigh fillets, cut into strips

200g sweet potato or rice noodles

200g sundried tomatoes cut in half

300ml thickened cream

300 ml boiling water

1 tbs extra virgin olive oil

1 large onion, diced

4 garlic cloves, chopped

½ tsp sea salt

½ tsp pepper

To garnish:

Fresh parsley

Shaved parmesan cheese

Chilli flakes

  1. In a wide base pot heat oil and add chicken. Fry until golden brown and then add garlic and onion. Reduce heat and sauté for 3 minutes. Then add the sundried tomatoes and sauté and further minute.

  2. Pour the cream and bring to boil. Season with sea salt and pepper.

  3. Add the noodles in and around the chicken and pour over the 300ml of boiling water. Make sure noodles are submerged. Cover pot with a lid and simmer for 6-7 minutes or until noodles are soft.

  4. Serve immediately. Garnish with parsley, parmesan and chilli flakes.

Note:

Only add the noodles just before serving. This is because the noodles will absorb all the sauce and slightly go dry if left longer than 15 minutes. You want there to be a nice creamy texture.

If you want to make this meal as a meal prep for the following day, then add more cream or water before reheating to make creamy again.
