Pastryless Spanakopita (Crustless Spinach & Feta Pie)

This Crustless Spinach and Feta Pie is made with fresh spinach, garden herbs, creamy feta cheese, and the nutritional goodness of eggs! It tastes just like traditional Spanakopita but without the fuss of rolling out your own filo pastry. Best of all it's healthy, juicy, and topped with plenty of cheese! Yum!

Now that winter has arrived, we are once again cooking my Pastryless Spanakopita every week, especially since we have so much silverbeet growing in the garden.

I think what is most appealing is that there is no need to make your own pastry yet it tastes every bit as good as a Spanakopita with pastry.

Best of all, you'll love that this is a one-bowl recipe. Simply throw everything into one bowl, combine well and then bake.

And what about leftovers you ask?

Simply store it in a container and enjoy it the next day. Leftovers can be eaten cold (lunchbox meal) or hot by just heating in the microwave or conventional oven. Best of all (and trust me) it makes an amazing breakfast.

Pastryless Spanakopita

Bakewear 30cm x 20cm

15-18 pieces

Prep 15 minutes

Cook 1 hour


300g silverbeet spinach leaves, washed, dried & finely chopped (Swiss Chard)

200g feta, crumbled

200g tasty cheese, grated (plus extra for topping)

1 cup of mint, parsley, and dill combined

8 eggs, whisked

6 green onions/shallots, sliced

3/4 cup milk

1 cup plain flour (gluten-free)

1/2 cup self-raising flour (gluten-free)

3 tbs extra virgin olive oil

freshly ground pepper


1. In a deep bowl, combine well all ingredients.

2. Preheat oven to 180C fan forced and line a baking dish approximately 30cm x 20cm.

3. Pour spinach and feta mixture into a baking dish and flatten with the back of a spoon. Sprinkle some tasty cheese (over half a cup if you love a crispy topping) over the top.

4. Bake for 1 hour or until the center is cooked. Rotate the dish halfway through.

5. Allow cooling in the baking dish for at least 30 minutes and then on a wire rack if needed. Slice into 4x4cm pieces and serve.
