I am so excited to have partnered with San Remo to let you know about their new gnocchi range, which includes a gluten free gnocchi that tastes delicious and is so light and fluffy in texture! When we first tried it we were all blown away at the restaurant quality and taste, so much so that my husband and kids decided to make firday night pasta night an ongoing theme and convincing me that they will be the ones cooking. Yes, that’s exactly what happened last Friday. I grabbed a glass of wine, my camera (to take some photos of my family’s efforts), passed over my recipe and sat at the kitchen bench to overlook my night off!

We had so much fun laughing at the kids being little chefs and my husband loved taking part in cooking dinner (I’ve got the recipe for you all below). What we all loved most was within 2 minutes the gnocchi was cooked and within 15 minutes dinner was ready. Who would have thought a shelf stable item can be used to create a gourmet style meal so quickly and easily!

A wonderful friday night time-saver and most importantly a much healthier, faster and cheaper alternative to take away food (and you all know how I feel about take away food!)

It was a great way to spend time together and a great way to connect with the kids. Kids in the kitchen teaches them not only how to prepare meals but it teaches them fine motor skills, multi tasking, how to follow instructions and most importantly creates stronger family relationships (if only I could enter a love heart emoji here)

Finally, for those who will be cooking my MUSHROOM & SPINACH GNOCCHI WITH PINE NUTS & LEMON ZEST, please let me know what you think and tag me and San Remo in your photos! 1 packet San Remo Gluten Free Gnocchi

300g brown mushrooms, sliced

100g baby spinach, roughly chopped

270g can coconut milk

2 tbs extra virgin olive oil

2 cloves garlic, crushed

1 tbs fresh thyme leaves

Sea salt & pepper

To garnish:

Pine nuts, toasted in a pan

Zest of 1 large lemon

Parmesan Cheese, grated

Chilli Flakes (optional)

1. In a deep frying pan add the EVOO, mushrooms and garlic. Sauté over a medium heat stirring for 2-3 minutes.

2. In the meantime bring to boil a pot of water to cook the gnocchi. Boil for 2 minutes.

3. Pour into the pan of mushrooms the coconut cream, thyme leaves and season. Simmer for 2 minutes.

4. Using a scoop strainer take the gnocchi out of the boiling water and pour it into the pan with the mushrooms. Stir to combine well and then add the baby spinach into the mushroom mixture and combine again. Simmer for 2 minutes.

5. Divide gnocchi between 4 bowls, garnish with lemon zest, chilli flakes, toasted pine nuts and freshly grated parmesan cheese.

Note: I need to thank my husband for being a willing model in my photos. As for son, he begs to be in more photos! Can't you tell with that huge smile! LOL
