This breakfast is filling, healthy, decadent and ready in only 4 minutes.

Quick Eggs and Spinach Breakfast

Serves 2


4 free range organic eggs

50g baby spinach

1 Roma tomato, sliced

1 tbs olive oil

sea salt/pepper

Optional: thinly sliced red onion


  1. Drizzle olive oil in frying pan.

  2. Spread tomatoes all around and then add all the spinach.

  3. Make 4 ‘nests’ with the spinach and crack the eggs in each ’nest’.

  4. Place the lid onto pan and cook over high heat for 1 minute. Then reduce heat and simmer for 3 minutes.

  5. Season with sea salt and pepper and serve immediately. Enjoy.
