Spanakopita Salad

This Spanakopita Salad (Spinach and Feta Salad) combines the classic flavours of Greek spanakopita in a fresh and vibrant salad. Made with baby spinach, feta, fresh herbs, toasted almonds and a simple lemon dressing, it's perfect as a light lunch, side dish or entertaining salad.

Spanakopita Salad

Serves 6 | Prep 15 mins

 

INGREDIENTS

 

Salad

200g baby spinach, roughly chopped

200g feta, crumbled

4 green onions, finely sliced on the diagonal

½ cup fresh parsley, chopped

½ cup fresh dill, chopped

½ cup fresh mint, chopped

½ cup roasted almonds, chopped (or toasted, slivered almonds)

1 tablespoon sesame seeds

Freshly cracked black pepper and pinch of sea salt

 

Dressing

¼ cup extra virgin olive oil

Juice of 1 lemon

Zest of half a lemon

1 tablespoon raw honey

 

INSTRUCTIONS


1. Prepare the salad

Place the baby spinach, green onions, feta, parmesan, parsley, dill, mint, and half the almonds into a large serving bowl and season with salt and pepper.


2. Make the dressing

In a small bowl or jar, whisk together the olive oil, lemon juice, lemon zest, and honey.


3. Dress the salad and serve

Pour the dressing over the salad and toss gently until well combined. Top with the remaining almonds and sesame seeds and serve immediately.
