Over 30 years ago, a sweet elderly lady that was in her 90s, offered aONE BOWL COUNTRY BAKE recipe to my mum. Mum loved making it because it was so easy and had so many vegetables in it, including canned corn, rashes of fried bacon and of course, wheat flour. Fast-forward 30 years and this is my version of the one bowl country bake. Obviously, now it is gluten free and I have added extra veggies and herbs.

You all realize by now that my recipes are pretty flexible. Add those two slices of bacon if you prefer that smokey flavor and add the corn (about ¼ cup) if you’re a fan of it too! I have the most fun cooking when I add my own flair to a meal so make it your own! It’s what cooking is all about. However if you want a light vegetable bake then stick with this recipe as it is delicious! 

This family is split in two as to how it is more delicious. Half of us love eating this warm, straight out of the oven and the other half love it cold the next day, out of the fridge! You make the decision because honestly I love it both ways! It is a delicious served with a salad or steak AND any leftovers are perfect for lunch the next day. Oh! And my daughter insist I let everyone know she loves this with a dab of Tabasco or Sriracha sauce on her slice (she is chilli obsessed). Enjoy x 

Makes 20-24 slices (depends on how big they are cut)

Preparation: 20 minutes

Cooking: 50 minutes

1 large onion, finely chopped 

1 large carrot, grated

1 large zucchini grated (squeeze any excess liquid)

1 medium red capsicum, finely diced

2 celery stalks, finely diced

3 spring onions/scallions, sliced thinly

1 cup Tasty Cheese

3 tbs Parmesan Cheese

20g butter, melted

6 eggs, lightly scrambled 

½ cup parsley, fresh and finely chopped

¼ cup mint leaves, fresh and finely chopped

Sea salt / Pepper

Optional: 2 tbs self raising flour

  1. Preheat oven to 180C fan forced.

  2. Line baking tray (approximately 30x20cm) with baking paper. 

  3. Combine all ingredients in a bowl.

  4. Spoon into tray and bake for 50 minutes or until cooked though.

  5. Allow to cool before cutting into squares for serving.
