Tomato Pesto Pasta

There is nothing better than being able to create a quick meal that tastes like a million bucks. This TOMATO PESTO PASTA is that meal and will be the new family favourite way to enjoy a pasta / salad. Best of all, this can be enjoyed fresh and warm or as a cold leftover the next day, straight out of the fridge! Enjoy x

Serves 4

Preparation: 10 minutes

Cooking: 10 minutes

Tomato Pesto:

100g semi-sundried tomatoes

80g extra virgin olive oil

50g pine nuts OR 50g sunflower seeds

1 large garlic clove

2 tsp white wine vinegar

To serve with:

1 pkt Gluten Free Pasta

fresh basil leaves

baby capers

optional: chilli flakes

  1. Cook pasta according to packet instructions. Set aside (keep warm).

  2. Combine all tomato pesto ingredients in a food processor.

  3. Pour pesto over pasta, toss and combine well. Serve with fresh basil leaves and baby capers.
