INGREDIENTS
8-10 beef or pork sausages, gluten-free
400ml beef or vegetable broth / or stock
500g baby potatoes, washed and diced into 2cm cubed
300g green beans, washed and sliced in half
4 small yellow squash, quartered
2 carrots, peeled, sliced in half and diced
2 red onions, quartered
2 tablespoons olive oil + extra
2 tablespoons Worcestershire sauce, gluten-free
2 tablespoons dried Italian herbs
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons corn starch (known as corn flour in AUS/UK)
1 teaspoon sea salt
½ teaspoon pepper
INSTRUCTIONS
1. Prepare the oven and pan: Preheat the oven to 200°C fan force and prepare a baking pan approx. 40x25cm.
2. Prepare and bake the vegetables: Prepare the potatoes, carrots, squash, and onions. Place them into the baking pan and drizzle over the olive oil. Season with sea salt, pepper, and 1 tablespoon of Italian herbs. Toss to combine and bake for 15 minutes.
3. Prepare the gravy: In the meantime, prepare the herb gravy. Heat the broth in the microwave or on the stovetop. Then add the Worcestershire sauce, garlic powder, onion powder, the remaining Italian herbs, and the corn starch. Whisk until well combined (note: I prefer to combine a nourishing powdered bone broth and hot water rather than a ready-made liquid stock).
4. Add the sausage and gravy: Remove the vegetables from the oven, and place the green beans and sausages on top of the layer of vegetables. Pour the herb gravy mixture into the baking pan and place the baking pan back into the oven for a further 40 minutes. Optional to turn the sausages halfway through so they brown on all sides.
5. Serve and enjoy: Remove the pan from the oven and sit for 5 minutes to allow the herb gravy to slightly thicken. Divide between bowls and serve. Enjoy!
